This authentic Italian pasta shape has been entirely produced with semolina of hard wheat varieties from Lucania (20% is Senatore Cappelli variety, which is an heirloom, high protein, non OGM, wheat rich in healthy and nutritional value). It has been bronze wire- drawn and slowly dried in static cells at low temperature. The name Orecchiette comes from the Italian word that means "small ear", because this pasta shape resembles them.
