Stilton, Caramelised Onion, Pear and Potato Pie

Ingredients (serves 4 – 6)


Ready rolled puff pastry
2 red onions, thinly sliced
2 pears, thinly sliced
3 medium potatoes, thinly sliced ideally with a mandolin
Approx 150g leftover Stilton cheese

Method


Slice thinly 2 red onions and cook in a frying pan with butter until dark in colour add a teaspoon of brown sugar and malt vinegar and cook out until sticky caramelised onion are ready.
Meanwhile parboil the slices of potato for 5 mins and drain
Place the rolled pastry into a flan dish.
Spread the onions on the base of the pan
Use the drained potato slice and create a single layer
Then create a layer of the sliced pears.
Then another layer of potato
Then crumble the Stilton before creating the top layer of potatoes
Bake in a preheated oven at 200c for 30 mins.
