Pesto is a traditional sauce originating in Genoa. It consists of crushed garlic, pine nuts, coarse salt, basil leaves, and Parmigiano-Reggiano, all blended with Extra Virgin olive oil. The name is the contracted past participle of the Italian verb ‘pestare’, which means to pound, to crush, because according to tradition, the ingredients are "crushed" or ground in a marble mortar through a circular motion of a wooden pestle.
Sommariva pesto is made according to the ancient Genovese recipe and only with the Genovese DOP basil, grown organically on the family's farm. It has always been one of the lead products of the farm and won several awards.
