Mulled wine Bellini


250ml red wine
cinnamon stick
2 star anise
few cloves
1 orange, zest and juice
3tbsp caster sugar
1 bottle of Prosecco

Method (serves 3-4)

1. Make a mulled wine syrup by reducing 250ml red wine with cinnamon stick, 2 star anise, few cloves and zest and juice of one orange.
2. Bring to boil then simmer until reduced by about half.
3. Add 3tbsp caster sugar bring to boil again then reduce on simmer for ten minutes.
4. Remove spices and allow to cool.
5. Pour your prosecco then add a tbsp of syrup to add a festive touch to a celebratory drink.
6. Enjoy!
