Lemon curd meringues


Ingredients:


2 egg white
4 oz caster sugar
Double cream
Lemon Curd All Butter, Welsh Lady
Plain chocolate for grating (optional)



Method


1. Preheat the oven to 140°C/fan 120°C/gas
2. In a large, grease-free mixing bowl, whisk the egg whites to soft peaks. While continuously whisking, slowly add the caster sugar a spoonful at a time until you have a stiff glossy mixture.
3. Place a spoonful of the mixture at a time onto a lined baking tray and bake for around 1hr 30 minutes or until they feel firm. Leave to cool.
4. Add whipped cream and lemon curd to the meringue and sandwich together, sprinkle grated chocolate.
