Eggs Benedict with smoked trout


Ingredients:


100g Smoked trout
English muffin, Crumpet or Roll as you like
2 Fresh eggs
Hollandaise sauce - from the shop or make it yourself if feeling energetic!
Chives, some chopped
Spinach, some wilted



Method


1. Pop the eggs in to simmering, well vinegared water to poach.
2. Meanwhile toast the muffin and wilt the spinach. If you prefer your hollandaise warm, pop a little in the microwave briefly.
3. When the egg is ready, drain it on a plate with kitchen paper. Then layer up the muffin with spinach, followed by the trout, followed by the poached egg, top with the hollandaise and some chopped chives.
4. Take to your Dad or get the children to take it up to your husband for a special breakfast in bed!
